Jim Tapping at The Preserve

New Hampshire native Jim Dodge has been tapping the sturdy Maples at The Preserve as long as he can remember. “I started when those two boys (his sons) were eight years old. One is turning fifty this year.” So you do the math, he’s been tapping trees and producing the sweet stuff for a long time! He works alongside his two boys Matt and Dennis. Each March we look forward to his phone call to check-in and see if it’s a good time to come up and set the buckets.

“I like to set bucket when it’s still cold” he says, “so you don’t break through the snow.”

Jim’s knowledge and and willingness to share the process with anyone interested has been a wonderful benefit to us. He helped up map out and mark our new Sugar Bush area on property, and given us valuable tips and tricks about maple sugaring over the years.

He produces roughly ten gallons of the liquid gold for us each season which we offer in our “Camp Store” as well as online. Our favorite use is in our Preserve Makers recipes such as our Maple Pecan Granola. Wedding couples and guests also offer our delectable maple syrup as a hostess gift or wedding favor, a sweet treat your guests are sure to savor.

His sugar shack is located just down the road in Chocorua where he boils the sap with the help of his children and grandchildren. That’s about as local as it gets!
